1Combine salt, ginger, sugar, vinegar, and soy sauce in a small bowl.
To make the spare ribs:
1Pour the marinade over the spare ribs in a shallow dish or bowl.
2Marinate overnight (or at least 4 hours).
3Place rack in the center of the oven. Preheat oven to 350℉.
4Drain off the marinade into a small saucepan and bake spare ribs on a rack in an uncovered baking dish for one hour.
5Dissolve the cornstarch in a small amount of water.
6Add the cornstarch mixture to the marinade in the saucepan. Bring to a boil, stirring occasionally, and let boil for around 5 minutes, or until the mixture is smooth and thickened.
7When the spare ribs are done cooking, remove them from the oven and place on a serving dish. Pour the marinade over the top and serve immediately.
